The Charms of “Kanda Sushi Chikamatsu”

Seasonal Appetizers and Sashimi

The course begins with an assortment of four appetizers. Small dishes are arranged on a red tray decorated with seasonal leaves, so you can enjoy the season with your eyes as well.

Among them, the imo (potato), gently simmered until soft, has the dignity of a proper appetizer and gives the sushi course a colorful start.

The sashimi that follows has sweetness in every slice and a refined flavor.

Edomae Nigiri Made with Red Vinegar Rice

The course includes eight pieces of nigiri, and you can enjoy squid, otoro (fatty tuna), zuke (marinated fish), anago (sea eel), and more.

The rice at “Kanda Sushi Chikamatsu” is made with red vinegar, a hallmark of Edomae sushi. The squid has a pleasant bite, and you can also taste its sweetness.

The white fish has a refreshing, delicious flavor. It is seasoned in advance instead of being dipped in soy sauce, so you can eat it as it is, which adds a sense of luxury.

The otoro, marbled with white fat, is so delicious it seems to melt. Serving otoro early in the course is a thoughtful touch.

Many more pieces of nigiri follow, so you can fully enjoy the variety of sushi.

Crab, Salmon Roe, and Sea Urchin Served in a Crab Shell, and Other Special Dishes

Chawanmushi (savory egg custard) comes between the nigiri, giving you a moment to relax partway through the course. Sweet and refined like pudding, this chawanmushi has a flavor so gentle that it warms you all the way to your heart.

This dish features crab meat, salmon roe, and sea urchin served in a crab shell, with seasoned cooked rice and nori seaweed. You place the rice, salmon roe, sea urchin, and crab on the nori and eat it.

The sea urchin is sweet with no bitterness at all. The soy sauce flavor of the salmon roe adds an accent, and the crab brings out the flavors, in a balance that matches the seasoned rice just right. It is a dish you should definitely try during the course.

The grilled dish offers a change of pace for the palate. It is lovely to break apart the tender flesh while savoring its subtle sweetness, and the ginger served alongside is just right for refreshing the palate.

Tamago, a Hand Roll, and Dessert to Finish the Course

The nigiri finishes with a thick piece of tamago that truly melts like pudding and fills you with happiness. I am not sure whether milk or cream is added, but it is really jiggly, with a texture different from the tamagoyaki (Japanese omelet) we usually eat, closer to a Western dessert.

The roll in the course is a kanpyo maki (dried gourd roll). It is hand-rolled, which is a thoughtful touch, and it satisfies that “I’d like just a little more” feeling at the end of the course so smoothly that it makes me happy. The course also comes with tomewan (the closing soup), a fitting, calming bowl to end with.

The final dessert is “pear.” The sweetness of the pear blends nicely into the sherbet, tangy and refreshing. It is a lovely, delicious dessert that brings the change of seasons from “summer” to “autumn,” as if memories of summer come back and quickly pass by.

Drinks to Go with the Food

In addition to sake, shochu and wine are also available. Besides draft beer, special beers are served in bottles, so beer lovers should give them a try!
